We're very proud to present this beautiful washed Chiroso from Daniel Caro's Finca El Tambo. Juan used this coffee to compete in the Canadian Brewers Cup Competition in the fall. Daniel Caro López is a 29-year-old producer in Anzá, Antioquia. He grows five hectares of Chiroso, in addition to a small planting of Gesha on his farm at a staggering 2,200 masl. While Daniel's family has been growing coffee since he was a child, his parents focused on traditional coffee varieties and conventional farming. After learning about Chiroso from their relatives in Urrao, they purchased El Tambo, which is at a higher elevation than their original farm and benefits from a cooler climate, perfect for growing Chiroso.

Antioquia

Boasting altitudes of up to 2,200 masl, Antioquia is a region well suited to coffee growing, but has gone relatively unrecognised in the international specialty market. This has begun to change in recent years, with the growth in populartity of the Chiroso variety, which is grown almost exclusively in Antioquia.

Mejorado

Chiroso is a relatively "new" variety, having come to prominence after Carmen Montoya won the Cup of Excellence in 2014 with it. The variety has grown in popularity, and is grown primarily in Antioquia. Often referred to as Caturra Chiroso, it has actually been identified as an Ethiopian Landrace variety. Some of the best expressions of the variety show beautiful florality and crisp acidity.

Washed

Daniel starts his lot by carefully handpicking the ripest of cherries, and removing all floaters prior to de-pulping. The parchment is then left in tiled tanks filled with water for up to 80 hours to ferment, with constant movement throughout the day. Upon washing, the coffee is left to dry in raised beds for 15-20 days, depending on the weather.
